Banana, Quinoa & Choc Chip Breakfast Bake

A Tasty Nutritious Meal To Start Your Day

Breakfast with a difference. Try this delicious banana, quinoa and chocolate chip breakfast bake with enough servings left over to share, or last you a week’s worth of breakfasts!

INGREDIENTS

  • 240g quinoa, rinsed and drained well
  • 200ml water
  • dash of salt
  • 6 eggs
  • 70ml almond milk
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 50g maple syrup
  • 3 bananas, mashed
  • 35g dairy-free chocolate chips

Yields 6 servings

DIRECTIONS

  • Preheat oven to 190c/170c fan.
  • Bring water to boil; add quinoa and salt.
  • Bring to a boil, then reduce heat to low and simmer, covered, for 20 minutes until water is absorbed and quinoa is cooked.
  • Remove lid and spoon quinoa into a large mixing bowl. Let cool.
  • In a medium bowl, whisk together eggs, almond milk, vanilla, cinnamon and maple syrup.
  • Add to quinoa and mix well.
  • Gently stir in mashed bananas and chocolate chips.
  • Spoon into individual baking dishes or one large baking dish.
  • Bake for 20-25 minutes until breakfast bake is set.
  • Let cool for 5-10 minutes before serving
  • Enjoy!
