Lina is renowned for her cooking and delicious recipes which are always super healthy, low fat and pack a protein punch. With this in mind, LA Muscle have caught up with the lady herself for one of her epic recipes, full details below;

Smoked Salmon and Peach Salad with Pesto Dressing

INGREDIENTS

  • 2 handfuls of baby spinach leaves, already washed
  • 150gr smoked salmon
  • 1 small peach or nectarine, washed and sliced
  • 1/2 avocado, peeled and sliced
  • 8 walnut halves, crushed
  • 1 tblsp green pesto
  • 1tsp extra virgin olive oil
  • 1 tsp lime juice

PREPARATION

  • Arrange the smoked salmon cut into strips on a bed of spinach-
  • Add the peach or nectarine slices, the avocado slices and the walnuts-
  • Prepare a dressing with pesto, extra virgin olive oil and lime juice.
  • Mix together and drizzle over the salad.
