Salmon and egg’s, High in protein and Low in carbs

Ingredients:

  • 8 eggs
  • 2 Tbsp chives, plus more for garnish
  • 3 Tbsp cream
  • 2 Tbsp butter
  • Small onion, chopped, 2 1/2 ounces
  • 6 ounces smoked salmon, cut in strips

Directions:

  1. Beat the eggs, chives and cream.
  2. Heat the butter in a large skillet.
  3. Add the onion and sauté until golden.
  4. Add the eggs and cook until almost set; stir in the salmon.
  5. Cook until the eggs are still moist.
  6. Sprinkle with chives, if desired.
