        Roasted sweet potato, crayfish tails & low fat Thousand Island dressing

        Ingredients:
 
Coconut 
oil
Pink 
rock salt
1 
Medium sweet potato 
1 
Small pot of crayfish tales 
1 
Tbsp Crème fraiche 
1 
Tbsp tomato sauce 
1 
Tsp cayenne pepper 
Rocket
Olivie oil 
Pumpkin seeds 
 Method:
 
Coat 
the potato in coconut oil, sprinkle with rock salt and bake at 200 c for 45 
minutes. Mix crayfish tales crème fraiche, tomato sauce and cayenne pepper in 
bowl. Slice the potato down the middle and top with crayfish mixture. Garnish 
with dressed rocket leaves and seeds.
