STRAWBERRY PROTEIN MUFFINS

If you’re into baking, then you’re going to love these delicious, high-protein, healthy muffins recipe.

Muffins are the ultimate convenience food. But due to their high carb and fat content, these baked delights tend to have a bad reputation. When you make your own at home, though, you can get all the goodness with ingredients you actually should be eating, like high-quality whey protein powder, Greek yoghurt, stevia, as well as a host of ingredients.

Each of these healthy muffin recipes makes enough to share with gym buddies or to freeze and defrost later. Enjoy the muffins at anytime when you feel to have your mid-day protein boost without the guilt.

INGREDINETS

Muffins:

  • 6 - Egg Whites
  • 100g - Grounds oats
  • One serving LA Whey protein in strawberry
  • 50g - Water
  • 1 tsp - Baking Powder
  • 1 tsp - Stevia
  • 100g - Greek Yoghurt

Topping:

  • 50g - Greek Yoghurt
  • 40g - LA Whey protein
  • 50g of strawberries
  • 10g - Ground oats

Directions:

  • 1. Pre-Heat the oven to 175
  • 2. Place all the muffin ingredients into a bowl and whisk together
  • 3. Line a muffin tin with 6 cases and share the mixture between them
  • 4. Place in the oven for 12-15mins (or when a metal skewer comes out clean)
  • 5. Mix all the topping ingredients together and place in the fridge
  • 6. Remove from the oven and cool on a rack
  • 7. Once cool glaze with the topping and enjoy!
