High Protein Thai Roast Chicken with Lemongrass and Chilli

Authentic and packed with flavour - you have to try this Thai Roast Chicken

If you're bored of your usual roast chicken then give this tasty recipe a try. It's packed full of protein for all of your muscle building needs.

Ingredients
1 x whole chicken
2 lemon grass stems
6 spring onions
4 garlic cloves
1 teaspoon minced red chilli
3 tablespoons fish sauce
3 tablespoons coconut oil
1 tablespoon honey
1 carrot
1 onion
1 eggplant
1 courgette
1 tablespoon thai red curry paste
3 lime slices for decoration/flavouring
a dash of fish sauce
a dash of soy sauce

Directions
Blend all the ingredients together to form a spicy paste. Cover both the inside and outside of the chicken with the marinade and leave for as long as possible (ideally overnight). After the chicken is marinated cook in the oven until crisp, golden and cooked throughout Chop the vegetables and cook on a high heat Add the curry paste, fish sauce and soy sauce to the pan and continue to cook until the vegetables being to soften Serve carvings of the spicy chicken with a helping of the stir-fry vegetables.
