Wherever you are, if summer is letting you down as far as sunshine is concerned like here in the UK, this very simple and light dinner will make the sun shine bright on your plates. Not only is it high in flavour but it's also packed with protein and is low in fat and calories.

Lina uses haddock, but you can use cod or any white fish for this. It simply goes under the grill as it is. The salsa is made of raw ingredients, consisting of....

  • Capers
  • Spring onions
  • Tomatoes
  • Oregano
  • Lime juice
  • Extra virgin olive oil.

Sour dough bruschetta (pronounced brusketta with a "k" not a "sh") grilled with garlic rubbed over it, tomato pure, black pepper and oregano. You got to try this out! There is practically no cooking involved so no excuses....Buon appetito!
