Blueberry Almond Chia Breakfast Bowl

A Vegan & Dairy-Free Meal

This recipe is based on overnight oats and creates a delicious breakfast meal that will give you energy to keep you going for hours. It’s also vegan and dairy-free for when you fancy something different to your normal breakfast options.

INGREDIENTS

  • 120ml unsweetened almond milk (or other non-dairy milk)
  • 2 tbsp chia seeds
  • 2 tsp pure maple syrup
  • 1/8 tsp almond extract
  • 75g fresh blueberries, divided
  • 1 tbsp toasted slivered almonds, divided

Yields 1 serving


DIRECTIONS

  • Stir together almond milk, chia seeds, maple syrup and almond extract in a small bowl
  • Cover and refrigerate for at least 8 hours
  • When ready to serve, stir the mixture well
  • Spoon about half the mixture into a serving glass or bowl and top with half the blueberries and almonds
  • Add the rest of the mixture and top with the remaining blueberries and almonds to create 2 layers
  • Serve and enjoy
