Veggie Egg Fried Rice

Mouth watering Veggie Egg Fried Rice

Ingredients:

• 15ml sunflower oil
• 5g Ground Garlic
• 140g chopped fresh peppers
• 140g fresh or florets
• 50g Fresh baby Sweet corn
• 50g Chopped Fresh Spring Onion
• 140g cooled, cooked rice
• 1 egg , beaten
• light soy sauce , to drizzle

Directions:
1. Heat oil in a wok or frying pan over a high heat.
2. Add Beaten egg and stir continuously for 2 - 3 Minutes
3. Add Ground garlic and continue to stir.
4. Add chopped peppers, baby sweet corn, Spring Onion & broccoli florets, stir-fry for 3 mins.
5. Tip in the rice, then stir-fry for another 3-4 mins.
6. Season to taste and spoon into serving bowls. Drizzle with soy sauce and serve
