In a Small Bowl, mix together all lemon juice, mustard, and herbs; pour marinade over the chicken
Marinate for 30 minutes and up to 12 hours covered, in the fridge.
In a large non-stick skillet, heat the oil over a medium heat; add in the chicken breasts and sauté for 5 minutes on either side until cooked through.
Remove from heat immediately and serve
