Delicious Egg, Cheese and vegetable Burrito

Ingredients:

  • 1 whole wheat tortilla
  • 2 large eggs (you can substitute egg whites if desired)
  • Diced vegetables of your choice (onions, peppers, mushrooms etc)
  • 1/8 cup of shredded cheese (If desired)
  • 1 tablespoon of salsa (if desired)
  • Salt and pepper to taste

Method:

1. Beat eggs in a microwave safe dish

2. Add salt and pepper to taste and veggies of choice

3. Heat in a microwave for 60-90 seconds

4. Place cheese and salsa over wrap

5. Enjoy!
