Lamb and Vegetable Kebabs

Ingredients (serves 4):

  • 450g diced lamb
  • 2 cloves of garlic
  • 2 onions
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • olive oil
  • salt
  • pepper

Preparation:

Crush the garlic cloves in a mortar and mix them with the salt, pepper and oil. Put the cubes of lamb in a bowl and coat them in the garlic mixture. Then cut the onion into quarters. Wash the peppers, remove the seeds and cut them into cubes. Make the kebabs alternating between lamb, onion and the three peppers. You can grill or barbecue the kebabs until the lamb is cooked through. Serve with wholemeal pita bread or tortilla wraps.
